    • Viticulture: Organic (Ecocert), biodynamic (Demeter, 2006). Small, concentrated berries.
    • Vinification: Pressed with whole clusters, ambient yeast fermentation. Aged for 11-18 months in 228L used oak barrels and another 6 months in tank. Bottled both as a classic cuvée with 40-50 mg/L added SO2 and as a "Zen" cuvée with only 10-20 mg/l added SO2.

    Additional Info

    The cuvée Millerandée is so named as it is comprised of grapes whose natural fertilization partially failed due to the age of the vines and the nature of the soil. The grapes are very small, with concentrated sugars, organic acids and aroma precursors which makes for a highly-complex and unique Chardonnay.
