    • Vinification: Double-sorted on a vibrating table and a sorting table. 100% de-stemmed. Minimal SO2 addition to the must. 12-25 day ambient yeast fermentation in open vats. Aged for 12 months in used barrels. Racked and blended in stainless steel tanks. No fining and gentle filtration if necessary.
