    • Vinification: Double-sorted on a vibrating table and a sorting table. 100% de-stemmed. Minimal SO2 addition to the must. 12-25 day ambient yeast fermentation in open vats. Aged for 12-24 months in barrels (15-30% new). Settled and aged further in stainless steel tank. No fining and gentle filtration if necessary.
