    • Vinification: Double-sorted on a vibrating table and a sorting table. 100% de-stemmed, minimal SO2 addition to the must. Ambient yeast fermentation in open wooden tank with daily punch-downs and pump-overs. Aged for 18 months in barrels (15-20% new). Blended and aged another 3 months in stainless steel tank. No fining and gentle filtration if necessary.
