    • Terroir: From the upper section of a southeast-facing hill, 270-300m altitude, on fine, brown clay soil laden with limestone scree.

    • Vinification: Double-sorted on a vibrating table and a sorting table. 100% de-stemmed, minimal SO2 addition to the must. 4-5 day cold maceration. 12-25 day ambient yeast fermentation in open vats. Aged for 15 months in barrels (10% new), racked and blended in stainless steel tanks. No fining and gentle filtration if necessary.
