• Vinification: Double-sorted on a vibrating table and a sorting table. 100% de-stemmed, 5-6 day cold maceration, ambient yeast fermentation in open vats with gentle punch-downs. Aged 15 months in barrels (10-15% new), blended and aged further in stainless steel tank before bottled. No fining and gentle filtration if necessary.
