    • Vinification: 5% whole cluster, gravity transfer to concrete tank. Ambient yeast fermentation with no added SO2, one punch-down daily until mid-fermentation and one pump-over daily until pressed. Aged for 12 months in barrels (15% new), followed by 5 months in tank. SO2 added after malolactic fermentation and at bottling. Bottled on a root day, waning moon.

    The plantation density is 10,000 vines per hectare. Rootstock is by massal selection only and vines are pruned into Guyot and Cordon de Royat.

    Les Champs Claude: Planted in 1986 and 1987. Southeast-facing, bottom of the slope in Chassagne (7% gradient) at 229m altitude, on alluvial/colluvial soils over limestone.

    En Boichot: Planted in 1986 and 1987. Southeast-facing, bottom of the slope in Santenay (4% gradient) at 235m altitude, on Ladoix and Corton limestone.

    Les Prarons: Planted in 192 and 1963. Southwest-facing, bottom of the slope in Santenay (2% gradient) at 211m altitude, on fine alluvial soils.
