    • Vinification: 20% whole cluster, gravity transfer to concrete tank. Ambient yeast fermentation with no added SO2, one punch-down daily until mid-fermentation and one pump-over daily until the end of maceration. Aged for 12 months in barrels (15% new), followed by 5 months in tank. SO2 added after malolactic fermentation and at bottling. Bottled on a root day, waning moon.

    Plantation density is 10,000 vines per hectare. Rootstock is massal selection only and vines are pruned into Cordon de Royat and Guyot Poussard.

    1er Cru Aux Roueres: Planted in 1947. Southeast-facing, bottom of the slope on shallow topsoil over hard limestone.

    Le Goti: Planted in 1957. Southeast-facing, bottom of the slope on shallow topsoil over hard limestone.

    En Creveche: Planted in 1943. Southeast-facing, bottom of the slope on sandstone with iron and silex.

    Sur Le Bois: Planted in 1988 and 1989. Southeast-facing, bottom of the slope on sandstone with iron and silex.
