    • Vinification: Pneumatic pressing, indigenous yeast fermentation. Aged for 12 months in barrel (maximum 30% new), racked, aged additional 6 months in older oak barrel. Light Kieselguhr filtration, unfined.

    Additional Info

    In the vineyards, water can easily filter through the cracks in the bedrock, forcing the roots to plunge deep in search of water and nutrients. Soils are plowed, compost is organic, and a very careful pruning limits yields. In the cellar, François’ goal is to preserve minerality and the specific character of each appellation. About 3,120 bottles are produced of this cuvée each year (depending on vintage).
