    • Viticulture: Organic. Guyot-Poussard pruning, 5,500 vines per hectare.
    • Vinification: Hand harvested and carefully sorted in the vineyard. Pressed with whole clusters, ambient yeast fermentation in tanks and barrels. Aged for 12-18 months on the fine lees in barrels (new and 1-2 years old).
