This vineyard was first planted in 1130 by Cistercian monks and has remained a vineyard since. By 2030, 900 consecutive vintages will have been made from this singular terroir.

Vines are planted at a density of 4,800 to 6,700 vines per hectare, with replanting done by massal selection. Rows are often plowed by horse. In order to have grapes of optimum ripeness, harvest is actually carried out five times over 3-4 weeks; each time only the grapes with the desired maturity levels are picked. Yields are low, only 20-25 hl/ha compared to the maximum authorized yield of 40 hl/ha.
