    • Vinification: Whole-cluster pressing (12 hours), cold settling for at least 48 hours, very slow indigenous yeast fermentation (up to 14 months). Aged for 5 months in 400L and 300L barrels (33% new oak), no malos, gentle earth filtration.

    The harvest team passes multiple times in the vineyard (three times in 2015 and 2016) in order to pick only botrytized grapes. Average yields are very, very low for this parcel, about 6 hectoliters per hectare.

    The Ogereau family started with this parcel in 2015. They've found that botrytis develops and concentrates earlier in the season in this vineyard, and that the terroir gives a characteristic minerality to the wine with a slight bitterness and acidity on the finish.
