    • Terroir: In the commune of Chaudefonds sur Layon. Southeast facing, steep hill sloping down to the Layon river. Shallow soil with shale bedrock.
    • Viticulture: Certified organic (Ecocert, 2002)
    • Vinification: Gently pressed, cold settled for 24 hours. Ambient yeast fermentation in used Burgundian barrels with no added SO2. Aged 10 months on the lees in used oak barrels. Full malolactic fermentation. Racked to tank to age 2 months before bottled. SO2 added at racking and before bottling.
