    • Terroir: On the southern bank of the Layon. Black schists, bedrock of Paleozoic Devonian limestone.
    • Viticulture: Certified organic (Ecocert, 2002)
    • Vinification: 100% de-stemmed. Ambient yeast fermentation, maceration by infusion. Aged on the lees in used Burgundian barrels. Racked to tank and aged a few months before bottled. Minimal SO2 additions.

    “Happiness and hard work go together” – reads the inscription on the wall of the Château de la Fresnaye, a 16th century Renaissance-style castle, which shares its soils with this Cabernet Franc.
