    • Variety: Cabernet Sauvignon, (may have some Cabernet Franc, depending on vintage)
    • Vine Age: Cabernet Sauvignon planted in 1971, Cabernet Franc planted in 1991.
    • Terroir: Steep crest between the Loire and the Layon rivers. Volcanic origin (rhyolite, cinerite) atop a schist foundation.
    • Viticulture: Certified organic (Ecocert, 2002)
    • Vinification: 100% de-stemmed. 1-month ambient yeast fermentation with maceration by infusion, no pump-overs. Aged on the lees in Burgundian barrels (2-4 years old). Racked to tank and aged a few months before bottled. Minimal SO2 additions.

    Besides its vines, lieu-dit Les Touches is also home to the tree on the domaine's emblem: the twisted, withered oak that clings onto the volcanic rocks through wind, fire, and drought.

    This wine is not made every year, just in vintages Patrick considers special and worth bottling separately. In some years, this cuvée may actually be a blend of Cabernet Sauvignon and Cabernet Franc, but the 2015 vintage is 100% Cabernet Sauvignon. The 2015 vintage has 10 mg/L of free SO2 and 22 mg/L total SO2.
