    • Terroir: Zersilles lieu-dit, thin/poor soil of shale and sandstone on Carboniferous-era bedrock (coal), southeast facing.
    • Viticulture: Certified organic (Ecocert, 2002), botrytized grapes
    • Vinification: Harvested in passes based on botrytis development. Gently pressed, settled for 24 hours. Ambient yeast fermentation and aging in used Burgundian barrels. Racked to tank to age a few months before bottled. SO2 added after first racking and at bottling.

    At harvest, pickers pass up to five times through the vines to be sure they pick only grapes with concentrated botrytis.

    2015 Vintage: Bottled: March 2017. Residual Sugar: 194 g/L. Alcohol: 11%. Free SO2: 45 mg/L. Total SO2: 224 mg/L. pH: 3.72. Yield: 8.2 hl/ha.
