    • Viticulture: Certified organic (Ecocert) and biodynamic (Biodyvin), high-density plantation of 8,500 vines/ha, single Guyot pruning.
    • Vinification: Vinified separately based on location on the hill: bottom of the hill and top of the hill. 30-60% whole-cluster, 2-3 week ambient yeast fermentation and aging for 9-11 months in wooden vats, blended and filtered before bottling.

    Michel Troisgros (local Michelin-starred chef) and Stéphane Sérol cultivate and vinify this vineyard together as a separate wine from the Domaine Sérol range. It was originally planted by their fathers more than 20 years ago. The soil is perfectly adapted to the local grape variety (Gamay St. Romain). Vines are planted at a high density (8,500 per hectare). Trellised vines, single Guyot pruning.
