    • Varieties: 55-60% Carignan, 25-30% Mourvedre, 10-20% Grenache, Syrah, Cinsault
    • Vine Age: 25 to 30 years (as of 2021)
    • Terroir: North, south-west and east-facing parcels with marly limestone soil over clay-silt-silica substrate.
    • Viticulture: Certified organic (Ecocert), Gobelet Languedocien and double Cordon de Royat training.
    • Vinification: 80-100% whole-cluster, 2-week ambient yeast fermentation in vats with no punch-downs or pump-overs. Aged 12 months on the lees in foudres and demi-muids. Lightly filtered. Minimal SO2 added if necessary.
