- Viticulture: Certified organic (Ecocert) and biodynamic (Demeter, 2000), 500P, 501 and herbal tea applications, some vineyards plowed by horse, free-roaming chickens for pest control and nitrogen.
- Vinification: 100% de-stemmed, 2-3-week ambient yeast fermentation, punch-downs and pump-overs, aged for 12-18 months in barrels (maximum 25% new), reds: no fining or filtration, whites: fined or filtered if necessary.
