  • Variety: Bitter: Marie Menard, Jeanne Renard. Bittersweet: Fréquin Rouge, Belle fille de la Manche, Kermerrien, Freilach’, Peau de Chien. Sweet: Bedan, Douce Coët Ligné. Tart: Locart vert, Petit Jaune, Rouget de Dol.
  • Viticulture: Organic (AB), no spraying, no chemicals, no copper or sulfate, minimal intervention beyond pruning and occasional mowing between the rows, integrated pest management.
  • Vinification: Hand harvested, manually sorted and left to further ripen for 2-12 weeks. Washed, crushed, pressed, and settled. 5+ month ambient yeast fermentation in tank, bottled in spring and refermented for 3 months. No fining, filtered only when required. No added SO2.
