Viticulture: Biodynamic (Demeter, 2023). Vineyards managed with cover crops, organic matter, and sheep grazing.
Vinification: Hand harvested, no added SO2 during vinification or aging, ambient yeast fermentation in small vessels, aged 10+ months on the lees, no fining, no filtration, no pumping until bottling, minimal SO2 (0-30 ppm) added before bottling.
