  • Viticulture: Sustainable, in official conversion to organic viticulture since 2022, natural grass cover crops, soil plowed in every other row to reduce competition, mulching instead of burning the pruning canes, green manure treatments, some plots worked by horse.
  • Vinification (whites): Foot crushed and pressed with a vertical press, 3-4-week ambient yeast fermentation, aging for 6-24 months in stainless steel and barrels, full malolactic conversion, 10-20 ppm SO2 added before bottling.
  • Vinification (reds): 50-100% whole cluster, ambient yeast fermentation, aged for 6-12 months in stainless steel and barrels, 5-20 ppm SO2 added before bottling.

From the outset, Mathilde chose to label her wines under Vin de France. Like many growers in the region, she sought freedom from restrictive tasting panel criteria and administrative hurdles, preferring to focus on her work in the vineyards and communicate transparently about her style. However, after gaining confidence in her wines and seeing positive results, Mathilde now feels ready to seek official recognition. Starting with the 2025 vintage, Terres d’Imaginaire’s wines will be classified either under IGP or AOC.
