- Vinification: Hand harvested. Destemmed without crushing. Ambient yeast fermentation with pump-overs. Aged in stainless steel tanks. Vinification and aging without SO2, minimal additions before bottling.
- Cider production: Harvested in multiple passes to collect fruit that has naturally fallen (no shaking). Double sorted; once in the vineyard and once with a sorting table. Washed, crushed, and pressed with a band press. Natural clarification and sedimentation. Ambient yeast fermentation at cool temperatures. No added SO2.
