- Viticulture: Sustainable, organic (not certified), biodynamic inputs, no herbicides or pesticides, low yields, Guyot-Poussard pruning, no hedging some years, 4,500 vines/ha, native cover crops, compost treatments.
- Vinification: 50-55% whole cluster, 2-3-week ambient yeast fermentation and maceration (sometimes with pied de cuve) in open-top tank, pump-overs and some punch-downs, aged for 18 months in botti (cask), no racking, no fining or filtration.
