- Terroir: From the north side of Charbonnières (less sunlight), 460 m average elevation, enclosed by a forest which cools and protects from winds, on sandy soil with granite and various weathered rock fragments.
- Viticulture: Organically farmed for over 20 years (not certified), high-density, gobelet-trained, manual labor with horse, cable plow and garden hoe.
- Vinification: Made only in vintages that permit it (2019, 2020, 2022, 2023...), 100% whole cluster, 2-3 week semi-carbonic maceration and ambient yeast fermentation with pump-overs, aged for 8-10 months in a sandstone amphora, no fining or filtration, minimal SO2 added before bottling (approx. 20 ppm).
