• Terroir: From multiple parcels within Sauzet, clay with Oligocene limestone substrate, soils more fertile than those at Trespoux.
• Viticulture: Organic (AB), biodynamic methods, late single-Guyot pruning.
• Vinification: Directly pressed for 4 hours, ambient yeast fermentation, aged for 8-12 months on the lees in stainless steel tanks and used barrels, no fining or filtration, SO2 added at bottling (< 10 ppm), bottled under cork.
