- Viticulture: Organic (AB), massale selections planted by Jean’s father, SO4 rootstock (can be highly productive, thus, some green harvesting).
- Vinification: Sorted, 12 to 20-day fermentation and maceration in stainless steel, fermentation started with an ambient yeast pied de cuve, aged for 23 months in 120 and 550 L sandstone tanks, SO2 added as needed, typically before racking or bottling.
Additional Info
Argillas (from the Latin argilla, meaning clay) is indeed very clay-rich and lies on the floodplain of a nearby river. Here, the etymology of the lieu-dit refers not to the soil’s nature but to its location. The soil in this parcel is governed by the hillside above and its gradual erosion.
