    • Viticulture: Organic (AB), low yields, 10-20 hL/ha. “The parcels are managed with agroforestry, with peaches and apricot trees planted both within and around the rows. A windbreak hedge was planted along the north side to prevent spring soil desiccation.”
    • Vinification: Sorted, 12 to 20-day fermentation and maceration in stainless steel, fermentation started with an ambient yeast pied de cuve, aged for 23 months in 120 and 550 L sandstone tanks, SO2 added as needed, typically before racking or bottling.

    “The parcel faces a former underground quarry with a 30–40 m limestone face oriented to the southeast. This wall absorbs heat during the day and radiates it at night, so the immediate environment is warm and dry. It also includes undeveloped calcareous grassland, which fosters high biodiversity. The underground quarries serve as bat refuges, and the bats naturally help control grape moths (Cochylis and Eudemis).”
