- Vinification: 80-90% whole cluster, 10 ppm SO2 added before vinification, fermentation started with an ambient yeast pied de cuve with white grapes, daily wetting of the cap with a bucket, punch downs after 5-7 days, pressed after 10-14 days with a vertical press, aged for 8-10 months in used barrels, no fining, no filtration, 5-10 ppm SO2 added before bottling (approx. 35 ppm total at bottling)

"'Sans Souci' means 'without worries' in French, which describes how the Fleurie fermentation went in 2023 and happy to report, 2024 as well. Some grapes/plots/vintages pose less worries during fermentation and it is always a dream when this happens."
