Santenay Mulan

- Vine Age: Planted in 2012
- Terroir: From 1er Cru Beauregard (declassified to Santenay due to the age of the vines), southeast-facing, clay-limestone from the Upper Jurassic Period, shallow topsoil with small stones.
- Viticulture: Purchased grapes, organic (not certified), 10,000 vines/ha, guyot trained.
- Vinification: 80-90% whole cluster, 10 ppm SO2 added before vinification, fermentation started with an ambient yeast pied de cuve of white grapes, daily wetting of the cap with a bucket, punch downs after 5-7 days, pressed after 10-14 days with a pneumatic press, aged for 8-10 months in used barrels, no fining, no filtration, 10 ppm SO2 added before bottling.

"The name 'Mulan' is a play on word for the moulin (windmill in French) that’s right behind the plot. I declassified the 1er cru plot because of the young vines. P.S. There is a cute monster hidden in the label."
