• Terroir: South-facing, above the village, red, shallow clay soil with sand and stones over limestone.
• Viticulture: Purchased grapes (same contract since the 2000s)
• Vinification: 50-100% whole cluster, ambient yeast fermentation, pump-overs and punch-downs, aged for 12+ months in barrels (10-15% new), no fining, occasional filtration.
