    • Varieties: 90% Gamay, 10% Mondeuse
    • Terroir: From purchased Gamay grapes from Anse (clay-limestone) and Domaine-farmed Mondeuse (silt-sand soil over molasse and puddingstone).
    • Viticulture: Domaine and purchased grapes, both organic
    • Vinification: Partially directly pressed and the rest 100% whole cluster (1 week semi-carbonic maceration), ambient yeast fermentation, fermented separately and blended before aging, aged for 5 months in tank, filtered, SO2 added once before bottling (less than 40 ppm total).
