  • Vinification (reds): De-stemmed, not crushed, 2-4-week ambient yeast fermentation, 5-9-day post-fermentation maceration, punch-downs and pump-overs, aged for 20-24 months in barrels (0-50% new), no fining or filtration, SO2 added before fermentation, after malo, and before bottling.
