• Vinification: Harvested in 3 stages according to ripeness level, crushed by foot, pressed with a vertical press, settled, ambient yeast fermentation and aging for 9-10 months on the lees in barrels (33-100% new), racked, bottled by hand, minimal doses of SO2 added when needed.
