• Varieties: Chardonnay
• Vine Age: Planted in 2015-2018
• Terroir: Located in Fussey at 600m altitude, below the parcel of Mainbey, southeast-facing, clay-rich brown soil with many stones, well-draining.
• Viticulture: Purchased grapes, organic (not certified), selection massale, 2-meter-high trellising, no hedging.
• Vinification: Crushed by foot, pressed with a vertical press, settled, ambient yeast fermentation and aging for 9-10 months on the lees in barrels (0-50% new) and sometimes in 600 L clay jar, racked, minimal doses of SO2 added when needed.
