    • Vinification: 100% whole cluster, fermentation started with an ambient yeast pied de cuve, punch-downs, pressed with a vertical press before dry, aged for 9-10 months in barrels (<50% new) and sometimes in 600 L clay jar, racked twice, bottled by hand, minimal doses of SO2 added when needed.

    2024: 90% Hautes Côtes de Beaune Les Crucibées (located in Fussey, below Mainbey, southeast-facing, very clay-rich brown soil with many stones, well-draining, organic (not certified), selection massale, 2-meter-high trellising, no hedging, planted in 2018); 10% Mercurey Village (from Roc Blanc, 20% slope, southeast-facing, mostly clay soil with marl, sustainably farmed, planted in the late 1950s/early 60s). Aged for 10 months in Stockinger barrels (50% new).

    2023: 100% from Hautes Côtes de Beaune Les Crucibées, aged for 9 months in barrels (50% new) and 600 L clay jar.
