    • Terroir: From “Les Cailloux” in the southwestern sector of Rully, south-facing, on a gentle slope, very calcareous white soil with many stones, well-draining
    • Viticulture: Purchased fruit sourced from the top to the bottom of the hillside, organic, average yields of 30 hl/ha
    • Vinification: Crushed by foot, pressed with a vertical press, settled, ambient yeast fermentation and aging for 9-10 months on the lees in Stockinger barrels, 75% new, racked, minimal doses of SO2 added when needed.
