• Terroir: Les Chapelleries: located in Cuchery on hard, brown limestone. La Loge des Vignes: located in Baslieux-sous-Châtillon on sand and hard limestone.
• Viticulture: High Environmental Value (HVE) and Sustainable Viticulture in Champagne (VDC) certified. Permanent grass in the rows, soil lightly worked just below the vines, grazed by sheep.
• Vinification: Primary fermentation in stainless steel tank, blocked malolactic fermentation. Aged for 24 months on lattes. Vinification and aging without SO2, minimal additions before bottling.
