- Viticulture: Certified organic (AB), 4,000 vines/ha, Gobelet Languedocien and double Cordon de Royat training. Vinification: 100% whole cluster, 2-3 week ambient yeast fermentation in open vats with no manual extraction, aged for 12 months on the fine lees in 7 hL terracotta jars and for an additional 6 months in tank, lightly filtered, minimal added SO2 (approx. 15 ppm).
