    • Vinification: 100% whole cluster, ambient yeast fermentation, daily wetting of the cap with buckets, 3 light punch-downs, pressed with a vertical press, aged for 18 months in used 350 L barrels, no fining or filtration, minimal SO2 added before bottling.
