    • Viticulture: Organic (certification expected in 2026), 10,000 vines/ha, Guyot-Poussard pruning, cover crops (fava beans, peas, rye), manual hedging, minimal tractor use, herbal treatments. /li>
    • Vinification: Pressed with whole clusters for 3-4 hours, cold settled (depending of lees quality), ambient yeast fermentation and aging for 12 months in 228 and 400 L used barrels, blended and aged for an additional 4 months in stainless steel tanks, no fining or filtration, minimal SO2 added after malolactic conversion and during blending (50-60 ppm total at bottling).

    “Les Cordères” may derive from Latin gordo, meaning “enclosed area” or “fortified place,” evoking Bouzeron’s elevated, historic character at the gateway to the Côte Chalonnaise
