- Vinification: 30% de-stemmed, 5-day cold maceration, 1-2-week ambient yeast vinification in stainless steel tank with daily pump-overs and a few punch-downs throughout, pressed with a vertical press, settled for 1 week, aged for 13 months in barrels (10-20% new), no fining or filtration, SO2 added before bottling (40-60 ppm total at bottling).
