- Viticulture: Sustainable. No chemical sprays, grass and weed control by mowing. Organic methods of disease control.
- Vinification: Destemmed, 20-40 day ambient yeast fermentation in steel tanks with 1-2 pump-overs per day. Aged for 6-18 months in used barrels and stainless steel tanks, further aged for a minimum of 1 year in bottles. No fining, no filtration. SO2 additions when needed throughout.
