• Vinification: Up to 15% whole cluster, 10-12 day pre-fermentation cold maceration, gentle extraction at the start of fermentation followed by up to 3-4 daily punch-downs at the end, relatively rapid de-vatting to maintain balance. Aged 18-20 months in barrel (about 50% new).
