- Vinification: 100% de-stemmed, 10-12-day pre-fermentation cold maceration, gentle extraction at the start of fermentation followed by 3-4 daily punch-downs at the end, rapid de-vatting to maintain balance. Aged 18-20 months in barrels (approx. 30% new).
