- Terroir: On the south face of the Purchon volcano, average slope of 45%, 100% derived from basalt.
- Viticulture: : Organic (AB, 2001) and Biodynamic (Demeter, 2009), selection massale.
- Vinification: Pressed, settled, ambient yeast fermentation in stainless steel tank, blocked malolactic fermentation, aged for 4 months on the lees in stainless steel, lightly fined and filtered, minimal SO2 added after the primary fermentation (approx. 15 ppm free SO2).
