- Apple Varieties: A blend of up to 12 different heritage apple varieties. 50% bittersweet (Bedan, Binet Rouge...), 25% acidic/tart (Rambeau, René Martin...), and 25% bitter (Mettais, Frèquin...).
- Tree Age: Planted by Benoit's father in 1996
- Terroir: La Folletière-Abenon, brown flint, silt and clay over chalk.
- Agriculture: Organic (AB, 2023), low-branched, 700 trees/ha.
- Cider-making: From a selection of 10% of the orchard's best apples, hand picked based on maturity, washed, ambient yeast fermentation, ancestral method, aged for 30 months on the lees in bottles, Keeving method disgorgement, racked 3-4 times, lightly filtered, bottled by gravity.
