• Viticulture: Certified organic (Ecocert) and biodynamic (Demeter). 10,000 vines/ha.
• Vinification: 100% de-stemmed, 2-week maceration, ambient yeast fermentation, aged for 2 years in wooden casks, no fining or filtration.
