- Vinification: Whole bunches pressed directly, separation of free-run juice, light decanting, indigenous yeast fermentation, partial malos (about 50%). Aged for about 8 months on lees in older 400L and 500L barrels (40%), in 20 hL puncheons (40%), and buried tanks lined with sandstone tiles (20%). Unfined, light filtration.

These vines grow on gentle slopes near the village of Saint Lambert du Lattay. A few of the parcels actually used to go into the domaine's Coteau du Layon Saint-Lambert cuvée.
