    • Viticulture: Certified organic (AB) and biodynamic (Demeter, 2006)
    • Vinification: Crushed and pressed with whole clusters, ambient yeast fermentation, aged for 11 months in used barrels, "Zen" cuvée with only 10-20 mg/L added SO2.
